If you’re enjoying Romeo’s signature pizza and pasta already, you’re probably wondering how people could even have left-over pizza, but if your eyes are bigger than your stomach – and it would be easy to see how with food this good – try some of these inventive options for making your leftover pizza taste better the next day.
The easiest suggestion is to simply add a glass of water when you microwave pizza to avoid a soggy crust – set the timer for about 45 seconds to a minute for a pizza that looks like it just came from a wood-burning oven. Try melting two slices of pizza together with shredded cheese for some ‘old school’ goodness. You can also jazz up your pizza by adding high-quality ingredients and reheat using any of the following methods described.
To reheat, use a non-stick or cast-iron pan over medium heat starting with the cheese side down for about five minutes, flip and cover a few more minutes. For crust down on medium heat, heat for 2 minutes and then add two tablespoons of water to the bottom of the pan, and cook until the cheese has melted for a perfectly crisp crust. You can also capture the best of both of these processes by using a waffle iron or a panini machine – remove the crust, fold your slice in half, and cook in a preheated waffle or panini cooker for about four to five minutes or when the crust is crispy and the cheese is gooey - ensuring you have some extra sauce on hand for dipping.
You can make pizza croutons by cutting up and sandwiching two small squares of pizza together and cook them together with the cheese facing inward using a panini press or in a medium-high heat pan press down with the back of a spatula to create little grilled cheeses to sprinkle over soup or salad.
For breakfast, tear up half a slice of pizza, mix in two eggs with extra cheese, a tablespoon of milk, and a pinch of salt. Cook until fluffy, plate with fresh herbs, and top with a splash of hot sauce.
For dinner make a pizza lasagna - preheat your oven to 350 degrees and coat the bottom of a 9x9 inch baking dish with tomato sauce, using the crust instead of noodles and the cheese and toppings as the filling. Serve and become everyone's best friend forever.
Try a savory pizza bread pudding - for every one slice of pizza, crack one to two eggs into a bowl; Mix eggs with 3/4 cup of whole milk, a tablespoon of fresh herbs, and half a cup of freshly grated parmesan. Stir until fully combined, add roughly torn slices of pizza, and any additional toppings if desired. Let this mixture sit for a minimum of 30 minutes, pour into a baking dish, top with grated parmesan, and cook for 45 minutes until the top has become crunchy and golden brown.
