THE HISTORY OF PIZZA

The traditional pizza we've all come to know and love originated with tomatoes. Tomatoes were first imported in Europe in the 16th century. The upper class believed the fruit to be poisonous, and they were rarely used in the kitchen. Instead, they were deemed "peasant food" because they were inexpensive and easily accessible. For the poor, it was another topping that could be put on bread.



More specifically, pizza originated in Naples. Emigration rates led to a surge in population and a negative impact on the economy. Poverty was widespread in the city. This increased pizza's popularity. Vendors would sell them on the street offering topping customization and cutting them into slices to fit every family size. In the early 1800s, the first pizzeria was established.



Despite its popularity among the poor, the upper class was still wary until the approval of Italian royals. King Umberto I and Queen Margherita visited Naples and requested food from the local pizzeria. They were anxious for an alternative to French cuisine. They presented the queen with a pizza topped with tomato sauce, mozzarella cheese, and basil, meant to represent the colours of Italy's flag. Their love of the pizza spurred national approval, and this topping combination is now more commonly known as "Pizza Margherita".



Italian emigration brought pizza to America and different regions put their spin on the dish. In Chicago, they developed the deep dish pizza, with a tall, thick crust meant to support heavy sauce, cheese, and toppings. In New York, they popularized wide slices with a thin crust.
